Rock sugar (冰糖, bīng táng) is crystallized sugar used in Chinese braises, sauces, and drinks to add a clean sweetness and a glossy sheen. The good news: it's easy to substitute. Plain granulated white sugar works 1:1 as a direct swap in almost any recipe — it's slightly less 'rounded' and gives a fraction less shine, but the difference is minor. Light brown sugar also works 1:1 and adds a faint molasses note that suits red-braised dishes. For the glossy lacquer on braises like red-braised pork, a measured amount of any of these dissolved into the sauce does the same job. Use about 1 tablespoon of granulated sugar for each 'knob' or 2 teaspoons of crushed rock sugar a recipe calls for.
